I never use oil in my PC and have never scorched a recipe. You are correct that PCs are far more safe than they used to be. I do listen for the hissing simply, but mostly just for pitch changes to ensure that my pressure is constant. If I couldn't hear the hissing, I would just have to be a bit more vigilant. From a safety perspective, I have never worried about my PC blowing up from too much pressure. The safety features of the KR will prevent any major mishaps. I made yuca last night in my PC for the first time. I was a bit nervous because yuca is not a common vegetable in the U.S. and I could not find the PC cooking time. I took my best guess (10 mins) and it came out great. Jim
