Hi Charlotte, I just got a new one too. I can't answer the cooking questions, because I haven't used it yet, but I can shed some light on your other question. The unlock position on the operating valve is to remove the valve for cleaning - there is a sliding safety lock on the handle that locks and unlocks the cooker itself. The instructions for removing the valve are in the cleaning section of the manual. I hope this helps.
