I have four KR pressure cookers here, including the one you're looking it. The interior of the KR is stainless steel. Stainless steel doesn't interact at all with food, which is what makes it a good material for cooking. I'm guessing either their copy editor made a mistake or you misread it. The aluminum sandwiching refers to the bottom, which has an aluminum core surrounded by stainless steel. No part of the Kuhn Rikon brings food into contact with aluminum.
