I made Lorna Sass' "garlic potatoes" last night, and they were delicious. (from GVCUP) Here is the recipe, for those of you who don't have the book: 1/2 to 1 C veg. stock Bring all to high pressure for 3 minutes. Quick release. Remove bay leaf. Drain off all but 1/2 C liquid. Mash coarsely with a fork or ricer (I just basically mixed it up briskly). Stir in 1-2 Tbs olive oil (I didn't), freshly ground pepper and 1-2 Tbs. minced fresh parsley. This and some brussel sprouts was a delicious dinner! I confess that I ate my potatoes with salsa on top, but I do that with everything.
