But you have nothing to lose by trying to make some soup stock with the stalk. And the top greens are very yummy. You could either eat them fresh or pretend like they are another sprout, that is of course if you are just talking about the little greens at the very top, not the big stalks that should have been broken off between the sprouts so that they would sprout. They would be big and woody, not as much as the main stalk though.

Let us (heh heh, lettuce) know how it works out.
