I'm not sure if this is still available (my copy is about 40 years old !), but I made sand plum jelly this summer using the information from the Ball Blue Book (canning guide) and only used a big stock pot for doing the "water bath" after cooking the fruit. I think you should be able to do what you are looking for without using pressure - at least that's what I did.
