Pressure cookers and pressure canners are two different critters and designed for entirely different purposes, the latter having longer heat-up and cool-down times as well as using a lower psi than a cooker. If you want to prepare fast, heathful meals then get a pressure cooker. If you want to process produce and certain other foods for storage then you'll need a canner.

Canning is a Science requiring updated, tested canning recipes, specialized equipment and accurate timing to process canned foods for safe consumption. Incorrect canning methods result in food poisoning (or worse), so learn the correct processes from a reliable source.

If you are new to canning check your area for canning classes at cooking stores, food coops, junior colleges, or contact your county, state university extension office - many have an internet presence now even if they don't have an office in your vicinity.
