This is a variation of Mexican Lime Soup I concocted for dinner. It is muy delicioso! 2 tomatoes, diced(or use a 15 oz. can of diced tomatoes, or Ro-Tel) 1 can of black beans (15 oz can) 1/3 cup fresh squeezed lime juice Put first seven ingredients in the cooker, cover and bring to high pressure. Cook for three minutes at high pressure, use quick release. Stir in beans and hominy. Loosely place pressure cooker lid on pot and allow to heat through while you finish cleaning the veggie prep. Remove pot from heat and stir in lime juice (don't cook the lime juice with the soup, it will ruin the flavor of the juice - a good rule of thumb for cooking with any citrus juice). Serve topped with cilantro.
