Subject: need help on Lorna Sass's Pear Cake-Pudding, please!

Hello everyone!

I just love her vegetarian cookbook, and for the moment, all the recipes are turning well, except that one! Help!

I prepared the mix as she says, using honey instead of maple syrup (maple syrup is a rarity here in Europe). I found it a bit too "solid", so I added maybe 1 tablespoon of apple juice. First possibility of mistake...

Then, my first try at cooking didn't go well, but I suspected it was because my PC was behaving a bit weird, took very long to get pressure. So, I oiled the rubber gasket, and tried again - 25 mins (as it had already cooked), and 15 mins natural-pressure-release.

The cake is good, but the top is all goey and uncooked on a good inch.

What was it? My adding the tablespoon? Not cooked long enough? Should it be longer than the 30 minutes indicated? If anyone has done this, please help! Thanks a lot in advance.
