I hope it's okay to post a recipe here so here goes.

I make a pretty good classic chili that can be as hot or mild as you like. Here is the small serving recipe that feeds 4. I don't really measure anything but here are the basic ingredients.

2lbs. lean ground beef or sirloin tips cubed and browned in very little olive oil
1lg can crushed tomato or 6 plumb tomatos blanched, peeled, and chopped
2 sweet vadalia onions chopped
1 bell pepper chopped
1 elephant clove garlic chopped or minced (love that garlic :))
1 can light or dark kidney beans drained
1 cup red wine (have also used burgundy)
water as needed
salt to taste
6-8 T chili powder depending on how strong of a chili powder flavor you like
1-2 fresh jalapenos, chilis, habanero, thai, or any other pepper you like. I have used most peppers with wonderful results.

Sear beef cubes in very light olive oil (or brown ground beef minus the oil) sprinkle with salt and pepper and drain. Add all ingredients to a pot, cook for about two hours, serve. I like to serve with saltine crackers, sprinkled with real cheddar and maybe a few onions for garnish.

I hope you enjoy!
I know I do :)
