Just browsing thru my Lorna Sass book here I can see that she says it's "critical to own a Flame Tamer (heat diffuser) that is set under the cooker to prevent scorching when cooking dry pilafs or concentrated ingredients that contain a high percentage of natural sugar." (page 3) And given the recent discussions here about the difficulties of cleaning scorched PC's, I think I'd just as soon have one LOL....
