I like to do two cups, but can't do that much in my casserole dish, it just overflows a teensy bit. I will go shopping for a new insert, and take along my pot. I was looking at the large Ohsawa pot, but don't want to spend that much money. The thing I don't like about doing rice in the casserole is it takes longer to heat up the whole load. Maybe if I started with boiling water in the rice dish, it would help. I will try that next time I do rice to see if it makes a difference. Also, I have noticed that I need to maintain a higher burner temp to keep the pot at pressure when doing casserole rice. Do you have that, too? I wonder if it's a matter of the casserole dish not heating up quickly.
