yes, you put in anything you want, except an acid food like tomatoes which would prevent the beans from getting tender. At least, they do when cooking in a pot on the stove, I assume the same thing would happen in a PC. Also, fresh herbs are usually put in at the end, after cooking. When you put the spices in before cooking you get the all day simmered flavor.
