Yes, I make vegetable broth and it comes out great; not only that but my house smells heavenly while it is cooking. It is really fast and easy to make vegetable broth in a pressure cooker. You don't have to peel or chop up your vegetables, Just quarter your onions and cut your celery down to a manageable size. Just throw your vegies: onions, carots, celery, a potato, plenty of garlic, plus any seasonings you like (no salt but parsley, thyme, bay leaf, or whatever) in your pressure cooker then fill with water. Cook at high pressure for 15 minutes. Strain through colander then with the back of a sturdy spook mash the soft vegetables to squeeze more broth out.
