My favorite pc is made by a company called Fissler. Their top of the line model is the Vitavit Royal. The feature which I like about their cookers the most is a second valve. This second valve is a simple rubber plug which has a thin hole in it and a pin which rises to seal the unit after exhausting steam for a couple of minutes after closing the lid. What this venting does is eliminate foaming which can occur when cooking foods such as rice. Some people don't seem to encounter that problem but I always did before purchasing a Fissler unit with the 2nd valve.

If you happen to encounter foaming with a pressure cooker without the valve it can be pretty simple to manually vent steam from your pressure cooker. If you have a Kuhn simply press center valve pin all the way down while the unit exhausts steam shortly after sealing the lid. To avoid hot steam it might be necessary to use a long kitchen spoon to press down with or take a wooden cutting board to press down with to shield your hands from the steam. On other units it may be possible to simply leave the valve closed after putting the lid in place while steam escapes for a minute or two.
