Last night I had dinner with friends. I was giving them my 6 qt. Mirro, since it has been neglected since I bought my Fagors. My friend made dinner, but I made dessert, in the PC, to demonstrate its capabilities. I chose the Rice Pudding, Sass's The Pressured Cook, p. 230. [In her husband's own words, "I don't mind vegetarians: I eat them." He is an adamant, dyed in the wool, carni.] For myself, I would have tried it with rice milk, and I wouldn't have used full fat, but because the children (and dh!) are somewhat picky, I stuck with what they knew. I used 12 fl oz whole milk and 12 fl oz half-and-half, used the cinnamon, skipped the raisins. Ohhh, Myyy! When we first opened the PC it was so soupy we couldn't see the rice. I worried. As it cooled, and my friend stirred it, it thickened into an absolutely decadent treat. Flo
