re: below - yeah, the sass recipe calls for winter squash, but in my home, we make a summery summer squash risotto. you cook the risotto plain (just broth & rice) and add into it (after cooking) pieces of grilled summer squash. we don't have an outdoor grill, but we have a great cast iron grillpan/griddle that we use to grill our veggies. anyhow, this was our first pc risotto and probably our favorite (although jim's broc ris is scrumptious, too)
