Subject: Nutty Rice

I've been experimenting with rice dishes. This is one that omni family and guests have very much enjoyed.

Nutty Rice

(2 t light olive oil)
1/3 C pecan pieces
1 1/2 C white basmati rice
1 C frozen green beans (I break them into smaller bites while still frozen - and I do toss them in frozen - that way they aren't mush after cooking)
2 1/4 C vegetable broth
pinch sea salt
1/2 t sage
1/2 t onion powder
1 1/2 t fresh minced garlic
Braggs Liquid Aminos or tamari

With oil:
Heat oil over medium heat. Add pecans, toast until lightly browned. Add rice, stir until coated with oil.

Without oil (this is how I make it for home use):
Toast pecans in dry PC for a couple of minutes.

After toasting pecans:
Add remainder of ingredients, with the exception of the tamari/Braggs. Bring to high pressure for 3 minutes. Natural pressure release for 8 minutes. If the pressure isn't down (mine never is) quick release. Stir rice with fork, add in as much Braggs as you wish (I think I normally use 2t or so).

This dish is delicious hot or room temperature. I've added tempeh after cooking to make it a heartier dish for myself. Green peas stirred in after cooking are another tasty addition.
