Subject: Sabrina , Made your Lemon Cheesecake........

What a great idea to make the cheesecake in a pressure cooker. I made a couple of changes because I lacked some of the original ingredients but it was very tasty . My changes-- I substituted 3 oz lemon yogurt for the cream cheese. - used the juice from 3 lemons - left out the water - used 3 Tbs flour - used 1 1/2 teas. cornstarch - sprinkled the top with grated chocolate while warm - used 1 1/2c extra firm tofu - used ginger cookie crumbs for the crust Because I was using an 8 inch springform pan I increased the crust ingredients to - 3 Tbs. Earth Balance -2 1/2 Tbs. sugar - 3/4 c ginger cookie crumbs I was pleased enough with it , that I would make it exactly the same nex time. Thanks for the recipe DJ
