I just put 3 cups of dry black-eyed peas in my PC, with about 10 cups of water. (I have an 8qt Manttra.) No spices at all. Brought it to high pressure, cooked for 15 minutes, let it natural pressure release as long as I could stand it (about 10 minutes), then quick-released the rest.

PERFECT black-eyed peas. I just salted and peppered and ate a bowlful.

I used to buy frozen black-eyed peas, and then boil them for 30-45 minutes, and still get hard peas with not-very-good drippings. Now I have to make a pan of cornbread and let my potatoes boil, and I have a delicious lunch. If I can wait that long.

These are the best black-eyed peas I've ever eaten!
