Pearl barley is supposed to be a good substitute for brown arborio rice. Best if barley is soaked for 24 hours as it can be chewy. I googled pearl barley risotto and came up with some interesting recipies (need to be modified) like Portobello Barley Risotto and Barley Risotto with Asperagus. I'm still waiting on my pressure cooker so I can't try it (grrr!!) Hope someone will try it and post results! Hey Sabrina! :)
