I like to cook beets BEFORE I cut the tops off or peel them. Just wash 'em a little and throw 'em in the pot. I put them in a stainless steel steamer. Then when they are done the peel just slips off easily and there ya be. They don't bleed to death either when they are cooked with their skins on.

I had artichokes this same way tonight, on the ss steamer in the pc.
