Well, I have four pcs, so obviously, I don't think one is enough. However, when you say you only cook for yourself, I'm amazed you find the 4qt too small...??? My husband is not veg & not terribly experimental when it comes to food. (He's a regular chicken/salad or green beans/bread kinda guy.) So I also us the pcs mostly for one person. I have two 2 1/2 qts as those are ideal for 1-2 cups of beans or grains. I have a 4 qt for larger amounts and a 6 ltr for soups or alot of vegetables (IE, 4 potatoes & 4 ears of corn.)
