Since nobody replied to my request and I had a lot of leeks on hand, I went ahead and made my own original creation. I thought it was very yummy. Here's my recipe.

Vegetarian Hot and Sour Soup

Half a medium sized leek, shredded (white and green parts)
2 carrots, thinly sliced
1 onion, thinly sliced
a few cloves of garlic, sliced or chopped...whatever you prefer
2 cups vegetable broth (I used "Imagine")
some water
Vietnamese chili garlic sauce (I used "Tuong Ot Toi Viet-Nam")
fresh lemon/lime juice or vinegar

Put all the veggies into the PC. (If you like, you can start by sauteing the onions and garlic in oil, first, but this isn't necessary.) Add enough water so that it looks like soup and not just a pile of wet veggies. Cook under high pressure for two minutes. When you're ready to serve, add the lemon or lime juice or vinegar to your taste. Enjoy!
