Hi, I use my PCs on an electric stove all the time. I'll admit that I prefer gas, but I also rent, and that means electric stoves, 90% of the time. I had independently discovered the same tricks that Lorna Sass recommends. 1. When a cooking step is complete, move the PC off the hot burner. 2. When the directions say, "reduce heat" either move the PC part-way off the burner, or move it to a different burner that has been heated to low. If I'm using more than one PC for a meal I will generally use one burner for "high." Start one pan on the hot burner; move it to a burner on low. Put the next PC on the same hot burner, then either move it to a third burner, or move it partway off the hot burner while the temperature drops. Enjoy! Flo
