Subject: Turnips, greens, and beans...

This morning, I cooked a huge pot of turnips (in the pressure cooker with a steamer basket--took 5 minutes), then their greens (totally filled my 8qt cooker to the rim when raw!)...I cooked the greens for 10 minutes just because I left some hard stems on there and wanted to make sure it was broken down well. Perfect!

Then, I cooked some navy beans that I'd presoaked (boil the water, let the beans rest for an hour or so, drain) in 10 minutes.

I also boiled some potatoes the "old-fashioned" way and made smashed potatoes, and whipped up a batch of cornbread. Oh, and microwaved some frozen corn kernels...

Anyway, there's plenty left over. Does anybody want some lunch?


Here's the neat part. Right now the three of us have eaten, and there is enough left in there to feed an army. I spent $1 on the potatoes, less than $1 on the navy beans, turnips plus greens were $2.84, corn and cornbread probably added up to another dollar or two. This $7 meal will feed the four of us at least 2 more times. So, a family of four eating 3 meals for $7...That's less than 60¢ each!

And right now I'm so full I think I may explode...LOL!
