Pepper-Flecked Potato-Lentil Medley, Complete Vegetarian Kitchen, p. 201. Last night's dinner, and lunch today and tomorrow for me and DH.

This one was great - so fast, easy, and Cheap! I think the whole recipe may have cost me a dollar to make. Oh, and it's quite delish!
