Just cut up your potatoes (big chop, not tiny), 1-2 cups of water (don't cover the potatoes, but come within an inch or so), and pressure cook for 5-8 minutes depending on how large the chop was. (If you are really lazy, you can just cut them in half or fourths, but then you definitely have to cook longer.)

Quick release then drain, mash, and add soy milk/margarine or whatever you typically add to mashed potatoes. I just mash with a little soy milk usually or add back a bit of the cooking water.
