Look for stainless steel. It distributes the heat better and is more healthful than aluminum. The size would be dependant on whether you are cooking for a family or just yourself.

You can buy a stovetop or electric model, and that depends on what you have room for!

My suggestion (and that's just me!) would be a 4 qt for yourself and a 6-8 quart if you have a family.

The Kuhn Rikon is apparently the Cadillac of pc's but if money is an issue, I find the Fagor ($39 for a 4 qt) to be a great cooking tool.
