Unlike you and a few others here, I need to follow a recipe at least the first time, before I alter it. I wish I was more the other way--inventive and creative. But now that I've made the recipe once, albeit with the wrong ingredient, I can see where your suggestions might make it better, as well as low-fat. I think it needs more color, also. I'm becoming a big fan of diced raw bell pepper to add at the end of many things. I'm not sure if that will go with a curry, but it looked unappetizing without some vibrant colors. I like the color and crunch of red bell pepper. And minced parsley on top would give more color. Anyway, I think I'll note your options in my cookbook for further attempts to improve on a good thing. And, I thought the same as you re: the tomato paste. But in browsing the cookbook, Lorna Sass uses tomato paste in several of her recipes. So I just tried to plan those recipes together for the week so I don't waste the tomato paste. (But then, my well-laid plans went awry when my DH decided to make his own inventive version of hot sauce by cleaning out the fridge. So...when I went to grab the partially used can of tomato paste, it was gone. LOL! Now, if he only used my hot sauce recipe--it works every time. No inventive flairs needed! His was not too good. Usually a bottle of homemade hot sauce doesn't last a day at my house. But that jar was on everyone's "DO NOT TOUCH" list. It was icky!) Thanks, Sassy
