I was very pleased with Lorna J. Sass' "Great Vegetarian Cooking Under Pressure" soup recipes that I tried recently. Potato Soup with Spinach (pg. 64) was a warming soup for a cold, snowy day. I liked the fact that the spinach added at the end didn't turn slimy (although I didn't cook it as long as suggested). I also added the red bell pepper raw at the end, as well as some roasted, to give a little crunch. The colors were very appealing. I also enjoyed the Celery, Corn, and Potato Chowder (pg. 59) that I made last week. With both of those recipes, I added extra potatoes. The only regrets I have are that there is never enough for leftovers at my house. Thanks again to Sabrina's urgings for all of us to purchase or drag out a pressure cooker. Sassy
