I just made (Saturday? I have kind of a loose grasp of time at the moment) the coconut rice (Great Vegetarian, p. 143) topped with bean-creamed spinach (Short-Cut Vegetarian, p. 117)

I ate the last of the spinach last night over a Von's whole-grain, egg-free, dairy-free frozen waffle. Wonderful for the conscience! (Previously, I would buy the waffles at Fry's as a treat, and eat them the way I have always eaten waffles. Not even vaguely McD. The waffles aren't 100% whole grain, and have a little added oil -- 1 g fat per waffle -- but topped with the spinach it made a very satisfying, very easy dinner. Whole grain, beans, dark leafy greens. Comfort food at its best, and it took about 2 minutes to heat.

I modified the spinach recipe...I had a bag of fresh, triple washed spinach that needed using. Who would use frozen with fresh sitting there, anyway? I want to make it again with some additional modifications.

Saturday I just needed something easy and no-brainer.

My health has actually been deteriorating. I've been doing very little cooking; that's why Short-Cut is so good for me right now.

[sorry. this is really stream of consciousness. or what is currently passing for consciousness.)

Anyway, my neck seems to be getting worse -- the whole DDD, herniated disk, spinal stenosis thing. While the vomiting is less frequent, it hasn't gone away, and the headaches are more frequent and worse.

Everyone else (doctors, family, friends) are taking this much more seriously than I am. It's simply inconvenient...I throw up when I travel, or read, or work on the computer, and I can't cook much. I don't get out as much as I would like to.

There are worse things that could happen.
It's so nice to have a board where I can talk about eating Coconut Rice. I feel constrained on the McD boards to, umm, conceal some of my dietary choices.

For me, the coconut rice is an occasional pleasure. As a child I was given white rice with butter, cinnamon-sugar and milk when I was ill. The coconut rice thus has all kinds of warm, fuzzy connotations for me.
