Which is an adaptation of Lorna Sass' recipe:

2 cups dried black beans (I soaked them overnight)
1 tbl olive oil (I don't use)
2 cups coarsely chopped onions
1 tbl crushed garlic (I use a rounded measure)
1 large red bell pepper, seeded and diced
3 dried chipotle peppers - thinly sliced, remove seeds. (I used 4 from a can)
2 tbl chili powder mix (in spice section of whole foods)
1/2 bag baby carrots (I used corn instead)
4 celery stalks
1/2 cup TVP (I used "beef" chunks)
1 28 oz can fire roasted tomatoes (Muir Glen)
1 carton veg soup stock (Pacific or Imagine)
(I also added 1 teaspoon of cumin powder and 1 tablespoon of oregano)

Sautee onions, garlic and TVP until onions are softened. Add all other
ingredients, and cook @ high pressure for 12 minutes. Use quick release.
Puree about a cup of beans (no stock), and add back into pot to thicken
chili.

I also added extra water at the end because, with the black bean puree, the chili became too thick.

Salt and pepper to taste.
