Depends on what you're doing with it - because the skin is SOO tough, it's hard to peel and dice before cooking. I usually halve it, scrape out the seeds, put a little water in the baking dish and turn it with the flesh down and bake it - 45 min to an hour, depending on size. I've never done anything else. Butternut squash is much easier to peel and chunk and use in recipes like that.
