New potatoes are thin-skinned, and I remember a discussion a while back on the vegan board concerning fingerling potatoes which apparently have a delicate skin and don't require peeling, so those would probably be okay, too. Also, I have a bag of red potatoes in my pantry right now that are thin-skinned. Hope that helps. Shona :)
