I found this fabulous little book called "Cooking With Seitan" by Barbara Jacobs and Leonard Jacobs, copyright 1994. I found it at a book clearance store and got it for only $2.00! (slightly damaged). They give step-by-step instructions on how to make seitan, either from flour or from gluten flour. It is so easy and delicious! They also tell you how to pressure cook the seitan, but I haven't tried it yet. Basically, you just bring "basic broth" and seasonings (recipes included) to a boil, then add the gluten pieces in chunks. Bring to high pressure and cook for 20 minutes. Quick release, then let seitan cool in broth for 20-30 minutes.
