I use my 11" square "ergonomic" griddle mainly for its' nonstick properties. It is great for pancakes. Their other pans look like they can be used for just about any stove top use. For more information it might help to look at their website (if you have not yet done so) There are testimonials by several famous chefs in the "contact" section. The url is: http://www.scanpan.com/ As far as what pans to suggest I suggest that you buy it for the types of foods you will be cooking. I do like the ergonomic Lines' feel & balance more than the "Classic". They are more expensive but if they last a lifetime the extra $ may be worth it.
