I had the Lorna Sass recipe for risotto and winter squash. I altered the recipe with acorn squash, thyme (instead of sage), no oil, and Soymage parmesian "cheese". I must say that THIS was my favorite so far. This is the perfect dish for when it's cold outside and you really want something that will warm you up. Tonight was not that night, but it was still very good. Jim p.s. Next time: Broccoli!
