I have tried to make seitan many times with very poor results. I would kill to be able to make good seitan. I have considered flying to California to take one of Tanya's (Native Foods) seitan classes. Sure, I have this overwhelming attraction driven by my belly and taste buds, but I also want to learn how to make great seitan. Please keep me posted. I will thank you and Tanya will thank you from sparing her from a raging vegan food stalker. Jim
