Subject: Pressure cooking seitan

Hey, I picked the Simply Heavenly cookbook by Abbot George Burke this weekend, and it has a lot of info about cooking seitan (not that info on cooking seitan is particularly rare around here, but it's still new to me-- I've never made any).
Anyway, he says that seitan cooked in the pressure cooker is superior in texture to other methods, whether cooked on the stove top, baked or in a slow cooker. What do you guys think? I'm curious.
