You most likely don't use a pc for doing jam. Usually you cook the fruit, add sugar and pectin, and seal in a water bath or upside down on the counter (the hot contents sterilize and seal). Water bath means you just simmer the jars of whatever (pickles, things that you don't want to cook hard like you would in a pc) in water that covers the lids.

I use my older jiggle tops for canning. They are aluminum and I don't use them for cooking food directly in the pot anymore. You should buy a Ball Blue Book or the Kerr version, if you want to do some canning. I do mostly tomatoes, since that is the only canned food we use, other than chillies or roasted red peppers. Remember that you will have to check to see how many jars fit inside your pc, and they need to sit on a rack or they'll crack. The Ball or Kerr books will tell you all that stuff and give step by step instructions.
