I actually had never really used the crumbles much before, but thought I would experiment with adding them to the chili. They add a richer texture to the recipe, without increasing the fat. The recipe is perfectly good without the recipe, but I think it's somewhat better WITH. I also prefer the TVP to crumbling a Garden Burger or some other meat analog, as the TVP just adds texture, but not flavor. The beans and chilis are so tasty already, you don't want to interfere with that. TVP is *dirt* cheap @ Whole Foods in bulk, and at most health food stores. You can probably even find it at a regular supermarket these days.
