I'm cheating! This has to be the shortest PC recipe in the book to type out. Will post another one over the weekend. Anyone got a preference? (see KJ's list above for PC recipes) 3 medium beets (3/4 lb) Cover the beets with water in a pressure cooker and bring to a boil over high heat. Lock the lid in place and cook over high pressure for 9-12 mins., depending on the size of the beets. Let the pressure release naturally. Drain beets and rinse under cool water to slip off the skins. Cut the beets in half, then cut each half into 3 wedges. Place in a bowl, toss with balsamic vinegar, and sprinkle with salt. *For a more intense beet flavour, allow to marinate 30 mins.
