I've been out of the "cookbook loop" for about 7 years now, but I have three Lorna Sass cookbooks that I LOVE. Recipes From An Ecological Kitchen (I believe that one is out of print & rebadged as "...Complete Vegetarian Kitchen..."), Cooking Under Pressure (not veg but still great resource) and Great Vegetarian Cooking Under Pressure.
