I don't have soul foody recipes but as far as soaking beans goes, I still perfer to soak them. However, you don't HAVE to soak them. Per my Kuhn Rikon book, you'd increase the cooking time by about 1/3. Also, salt prolongs the cooking time. You may already know this, but you can cook collards in the pc, too... 5-6 minutes at high pressure.
