PC Potato Soup

Decide how many people are eating. Put that many cups of water into the cooker. Add the correct amount of veggie broth (cubes or loose).

Chop up enough potatoes for each person to get one.

Chop up 1/2 carrot, 1/4 red or green pepper and 3 mushrooms per person.*

Onions and celery are optional, garlic is not.

2-3 minced garlic cloves.

Throw everything into the water/broth, cover, bring up to pressure, cook for 3 minutes. If your potatoes are small, you can cook for less.

In a sauce pan, get 1 TABLESPOON of butter, margerine, oil to 1 TABLESPOON flour for every cup of water that you started with. Heat the butter slowly, add the flour when the butter is melted. When this roux is nice and bubbly, add 1-2 cups broth from the soup to the roux, stirring to mix. When the roux is well mixed, add all of it back into the pressure cooker, bring to a boil, stirring constantly.

Add salt if needed (usually the broth cubes are salty enough.)

Serve with bread and a salad.

Variations: I mix different spices into the soup at the table. Cajun spice is especially good, as is herbs de Provence. I've even gone the Italian route with fennel and oregano.

(*Ok, you can reduce or elminate the mushrooms if you must, but my children, who hate mushrooms, think this soup is much better if the mushrooms are in it. Of course, they won't EAT the mushrooms...)
