Today I did it the easy way using canned beans cuz I was in a hurry. It took me 15 mintues to make a big ole' salad and les than 10 to make my spicy black bean mix. Making it out of dry beans is also easy, just a tad longer.

Easy Black Bean Ole

3 cans drained Black beans
one chopped red onion
1 finely diced carrot (optional)
Can diced chilies or jalapeno pepper (my fave)
1/2 bag Trader Joes Frozen Pepper Mix (red, yellow, green bells)
Can of Rotel (mild, med or hot)

Dump in pc, cook under pressure 5 mintues.
(if using dry beans, follow your pc's or Lorna Sass's directions for cooking black beans depending if you presoak or not)
