Subject: Let's get the recipes going: here's my black bean chili recipe
Date: March 19, 2003 at 11:39 am PST
adapted from a Sass recipe:
(we're having this for lunch today)
2 cups dried black beans (I speed soak first)
1 tbl olive oil (optional)
2 cups coarsely chopped onions
1 tbl crushed garlic
1 large red bell pepper, seeded and diced
3 dried chipotle peppers (thinly sliced, remove seeds)
2 tbl chili powder mix (in spice section of whole foods)
1/2 bag baby carrots
4 celery stalks
1/2 cup TVP (texturized vegetable protein, available bulk @ Whole Foods,
or pre-packaged.
1 28 oz can fire roasted tomatoes (Muir Glen)
1 carton veg soup stock (Pacific or Imagine)
Sautee onions, garlic and TVP until onions are softened. Add all other
ingredients, and cook @ high pressure for 12 minutes. Use quick release.
Puree about a cup of beans (no stock), and add back into pot to thicken
chili.
Salt to taste (tamari is good too).
