Subject: I just made a variation on one of the Lorna Sass recipes

I simmered diced onion, chopped carrot, chopped celery, and dry mushrooms in 1 cup of water for a few minutes (like 2-3) until they started to get tender and the water was hot. LOL. Then I added 3 cups of arborio (risotto) rice, 7 cups of vegetable stock (actually 4 cups of stock and 3 cups of water), 1/4 teaspoon of saffron threads, and put the lid on. Brought it up to pressure, and cooked for FIVE minutes. Then I quick-released, and added salt and pepper and fresh parsley, and put the soy parmesan on the table for a sprinkle on top.

It was SCRUMPTIOUS.

PS Lorna's recipe actually calls for pre-cooked veggies, but I found that the carrots, celery, onions and mushrooms did just fine with the risotto. I don't cook with oil, although her recipe calls for olive oil. I bet steamed broccoli would make a great side dish to this, and I'm also going to add zucchini and yellow squash when it's summertime. I've got a couple of butternut squashes in there to make Risotto with Winter Squash for lunch. YUM.
