I have not found a recipe in Lorna Sass's Great Vegetarian Cooking Under Pressure that I don't love. One of my all-time favorites is the Cauliflower-Potato Curry. I haven't actually followed the recipe perfectly yet (LOL) but I don't think you can mess this up. And it cooks in THREE minutes.

I love lentil soup, "regular" vegetable soup with loads of root vegetables (parsnips and turnips are especially yummy) and cabbage, and of course, potato soup is divine.

OH, and I also made some killer risotto. I double the recipe, because we still *almost* eat it all, but at least there is one serving left for lunch the next day, and no one is fighting over licking the bowl clean!
